Banana Bread

Ingredients
- 1 3/4 C flour
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/3 C soft shortening ( I use Take Control or Benecol)
- 2/3 C sugar
- 2 eggs (can use egg beaters)
- 2 TB milk
- 3 mashed ripe bananas
- 1/4 C nuts
Directions

Combine flour, baking powder, baking soda, and salt and set aside.

Cream together shortening and sugar. Add eggs and milk, one TB at a time to the shortening mixture and beat well in between.

Mash bananas.

Add dry ingredients and bananas alternately to the shortening mixture. Stir in nuts.

Grease a loaf pan. Bake at 350 degrees for 60 minutes. Cool in pan, on a rack for 10 minutes, then remove from pan.
