Mushroom and Potato Chowder

Ingredients

  • 1/2 cup chopped onion
  • 1/4 cup butter or 1/4 cup margarine
  • 2 tablespoons all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 3 cups water
  • 1 lb fresh mushrooms, sliced
  • 1 cup chopped celery
  • 1 cup diced peeled potato
  • 1/2 cup chopped carrot
  • 1 cup half-and-half cream
  • 1/2 cup grated fresh parmesan cheese

Directions

  1. In a large Dutch oven, saute onion in butter until tender.
  2. Add flour, salt and pepper; stir to make a smooth paste.
  3. Gradually add water, stirring constantly.
  4. Bring to a boil; cook and stir for 1 minute.
  5. Add the mushrooms, celery, potatoes, and carrots.
  6. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender.
  7. Add cream and Parmesan cheese; heat through.
