Blue-Eyed Bakers’ Granola

Ingredients
- For the Dry Ingredients:
- 1 cup firmly packed brown sugar (light or dark is fine)
- 2 cups any kind of raw nut or mixture of nuts, roughly chopped
- 10 cups Quaker old-fashioned oats
- 1 cup-ish sweetened flaked coconut
- 1/2 cup wheat germ
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- For the Wet Ingredients:
- 1/4 cup honey
- 1 1/4 cup vegetable oil
- 1 1/2 teaspoon pure vanilla extract
- 3/4 cup boiling water
- 2 cups dried fruit (one kind or more than one type)
Directions

Preheat oven to 225 degrees Fahrenheit.

Mix dry ingredients together in a large bowl, breaking up any clumps of coconut and brown sugar. Set aside.

Whisk the wet ingredients together well in a smaller bowl, adding the hot water last to melt some of the honey and oil together. Pour the wet ingredients over the dry oat mixture. Make sure it is well combined.

ace the granola loosely into two shallow 12-x-17" baking sheets and bake for 1 to 1.5 hours in the oven. Turn the oven off and allow the granola on the pans to cool in the oven. Add the dried fruit and serve with yogurt, over ice cream or just with plain old milk.

Store in an airtight container at room temperature.

PS- We used walnuts for our nut and both apricots and cranberries because we totally didn’t buy enough apricots. Whoops. But our fav fantastic combos are Almond-Cranberry, Pecan-Blueberry and Walnut-Apricot.
