Banana Chocolate Chip Muffins

Ingredients

  • In a mixing bowl combine:
  • 2 1/2 cups of flour (I use 1/2 whole wheat 1/2 white)
  • 1/3 c. turbinado or brown sugar
  • 1/2 -3/4 c. of chocolate chips
  • 1 t. baking soda
  • 2 t. baking powder
  • In a blender combine:
  • 1 c. silken tofu (or yogurt)
  • 3/4 c. milk (or soymilk)
  • 1 egg (optional - you can add another banana or 1/4 c. milk instead)
  • 1 banana
  • 1/3 c. honey
  • 1/3 c. oil
  • 1 t. vanilla

Directions

  1. Pour the blender ingredients into the dry ingredients and mix just until

  2. moistened. Bake at 400 degrees for 15 minutes.
