Banana Chocolate Chip Muffins

Ingredients
- In a mixing bowl combine:
- 2 1/2 cups of flour (I use 1/2 whole wheat 1/2 white)
- 1/3 c. turbinado or brown sugar
- 1/2 -3/4 c. of chocolate chips
- 1 t. baking soda
- 2 t. baking powder
- In a blender combine:
- 1 c. silken tofu (or yogurt)
- 3/4 c. milk (or soymilk)
- 1 egg (optional - you can add another banana or 1/4 c. milk instead)
- 1 banana
- 1/3 c. honey
- 1/3 c. oil
- 1 t. vanilla

Pour the blender ingredients into the dry ingredients and mix just until

moistened. Bake at 400 degrees for 15 minutes.
