Copper Pennies/Marinated Carrots

Ingredients
- 2 lbs (5 Cups) carrots cut in 1/4 rounds
- 1-2 med. onions, sliced & separated
- 1 green pepper, cut into strips
- 1 can tomato soup
- 3/4 C. vinegar
- 2/3 C. sugar
- 1/2 C. oil
- 1 tsp salt
- 1 T Worestershire sauce
Directions

Cook carrots in sm. amt salt water until tender

Drain carrots

Combine soup, vinegar, sugar, oil, Worcestershire sauce, onions, peppers

Pour over carrots and marinate 12 or + hours

Marinade also makes an excellent salad dressing
