Cranberry Bars

Ingredients

  • 1 1/2 cups flour, sifted
  • 1 1/2 cups quick-cooking oats
  • 3/4 cup brown sugar, packed
  • 1 teaspoon lemon zest
  • 1/4 teaspoon baking soda
  • 3/4 cup butter melted
  • 16 ounce can whole cranberry sauce
  • 1/4 cup pecans finely hopped

Directions

  1. Preheat oven to 350 degrees.

  2. Stir together flour, oats, brown sugar, lemon zest and soda. Stir in melted butter and mix thoroughly.

  3. Reserve 1 cup of this flour-oat mixture for topping.

  4. Pat the remaining mixture into an ungreased 12×7×1/2 inch pan.

  5. Bake at 350 degrees for 20 minutes.

  6. Stir cranberry sauce to soften, then spread carefully atop baked crust.

  7. Stir nuts into reserved topping and sprinkle over cranberry sauce layer.

  8. Lightly pat down.

  9. Bake 25-30 minutes or until golden.
