Ingredients
- 2 cups sugar
- 2 egg yolks
- 2 egg whites
- 2 cups butter (I used half unsalted butter and half salted butter or margarine.)
- 4 cups flour
- cinnamon as needed
- pecan pieces as needed
- extra sugar, as needed
Directions
-
Cream butter and sugar well, add egg yolk and flour.
-
I suggest using some Pam on the pans.
-
Spread on two 13×9 inch square pans (I also used a 10×7 pan too), brush with egg whites that have been beaten until foamy (if I don’t have enough egg white sometimes will add extra whites).
-
Sprinkle with pecans generously, very lightly press pecans down into dough, very lightly.
-
Sprinkle generously with sugar and cinnamon.
-
Bake until light golden brown, 10-15 minutes at 350 degrees. (You want it golden on the bottom, I have to bake longer in my oven.)
-
TIP: I use glass clear Pyrex dishes so I can see how brown the crust/cookie is…will take longer than listed, at least on my oven it does.
-
Cut while still hot…then cut again when cool.
