Country Ground Beef Casserole

This was my mothers favorite dish to take to a covered dish affair. It is a great all in one meal, perfect for moms that have to serve dinner in shifts and freezes well. I like to serve with a loaf of buttered french bread.

Ingredients
- 1 1/12 pound ground beef
- 1 onion chopped
- 1/4 bell pepper chopped (very optional)
- 1/4 clove garlic finely minced or garlic salt
- 1 can cream of celery soup
- 1 can cream of mushroom soup
- 1 jar pimentos (optional)
- 8 ounce macaroni cooked
- 1 cup sour cream
- 1 package frozen mixed vegetables, par boiled
Directions

Brown beef, onion and bell pepper (if used). Drain.

Add remainder of ingredients.

TIP: I par cook the frozen vegetables in the microwave in the same casserole dish I will use to build and bake my completed meal in.

Bake, covered, at 350 degrees until bubbles and heated through.

Top with grated cheese…5 more minutes in oven uncovered.
