southern comfort cake

Serves 12 people

Ingredients

  • 1 yellow cake mix
  • 1 pkg (3.9 oz) instant vanilla pudding
  • 4 eggs
  • 1/2 cup cold water
  • 1/2 cup vegetable oil
  • 1 cup chopped pecans
  • 1/2 cup Southern Comfort
  • For Glaze:
  • ⅛ lb of butter
  • ⅛ cup water
  • 1/2 cup sugar
  • 1/4 cup Southern Comfort.

Directions

  1. Mix all cake ingredients for 2 minutes on medium speed. Pour into greased and floured 10 inch tube or 12 cup Budnt pan. Bake at 325 degrees for 60 minutes. Cool on wire rack in pan for 10 minutes then invert on plate. Prick top of cake and brush with half of glaze. Allow to cool completely, reheat glaze and brush over entire cake. May sprinkle top with additional chopped pecans if desired.

  2. For glaze: melt butter, water and sugar in pan, bring to boil. Boil 3 minutes, stirring constantly. Remove from heat and pour in 1/4 cup of Southern Comfort.
