Chocolate Almond Butter Cookies

I use my cookie press with this recipe, but even without one, these are quick and yummy – slightly dry cookies.

Ingredients
- 1/2 CUP OF SUGAR
- 3/4 CUP BUTTER, softened
- 1 EGG YOLK
- 1 teaspoon ALMOND EXTRACT
- 1-1/2 CUPS ALL-PURPOSE FLOUR
- 1/4 CUP UNSWEETENED COCOA POWDER
Directions

at oven to 375. In large bowl combine all ingredients except flour and cocoa.

Beat at medium speed until light and fluffy (2-3 min.) Gradually add flour and cocoa until well mixed (2-3 min).

Shape rounded teaspoonfuls as desired (1”balls, 2-3” logs, balls flattened, balls with indentations, etc.) Or

use cookie press. At this point you can top with sprinkles or dried cherries, nuts…

Place 1” apart on cookie sheet. Bake for 7-9 minutes or

until set.

Cool. Decorate with melted chocolate, melted almond bark, nuts, colored sugars, candied fruit, candies, cherries, etc.
