Ingredients
- 1 1/2 cups all purpose flour
- 1 1/2 tsp baking powder
- 3/4 tsp salt
- 1/2 tsp ground nutmeg
- 1/4 tsp baking soda
- 2 eggs
- 3/4 cup sugar
- 1/3 cup vegetable oil
- 3 Tbsp milk
- 1 1/2 cups diced peeled apples
- 1 cup walnuts
- 3/4 cup flaked coconut
Directions

In a large bowl, combine the flour, baking powder, salt, nutmeg and baking soda. In another bowl, beat eggs, sugar, oil and milk. Stir in apples, nuts and coconut. Stir into dry ingredients just until moistened.

Fill 18 greased muffin cups three fourths full. Bake at 350 for 20-25 minutes or until a toothpick comes out clean. Cool in pan 10 minutes before removing to a wire rack
