Prune Nut Cake

This recipe is from the 1970’s from my days at Lone Star Gas Company and the Home Ec department. One of those cakes that is better two days later.

Ingredients
- 2 cups sifted flour
- 1 teaspoon soda
- 1 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 2 cups sugar
- 1 cup cooking oil
- 3 eggs
- 1 cup buttermilk
- 1 cup pecans chopped
- 1 cup uncooked prunes chopped
- 1 teaspoon vanilla

- GLAZE:
- 1 cup sugar
- 1/2 cup buttermilk
- 1 tablespoon light corn syrup
- 1/4 teaspoon soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1 tablespoon margarine
Directions

Cream together sugar, oil and eggs.

Sift together flour, soda, salt, cinnamon and allspice.

Beginning and ending with dry ingredients, add dry ingredients to creamed mixture alternately with buttermilk.

Stir in pecans, prunes and vanilla. Pour into greased and floured bundt or 10 inch tube pan.

Bake at 350 degrees for 1 hour and 10 minutes.

Remove from oven and let cool in pan for 5 minutes. Remove from pan, place in shallow pan and immediately spoon glaze over hot cake. Keep spooning glaze over cake until it is absorbed.

Cool completely.

GLAZE: In saucepan, combine all ingredients. Bring to boil over low heat and continue cooking 4 to 5 minutes, stirring constantly. Spoon over hot cake.
