Oven-Glazed Chicken on Rice

Ingredients

  • Orange-Soy Glaze
  • 1/4 cup fresh orange juice
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon grated orange zest
  • 1 tablespoon honey
  • 1 teaspoon paprika
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon salt
  • Other:
  • 3 1/2-4 lbs chicken pieces, excess fat and skin trimmed
  • 1 cup long-grain white rice, cooked according to package directions (3 cups cooked)

Directions

  1. Preheat oven to 375°.

  2. In a medium bowl, whisk together all the glaze ingredients.

  3. Place chicken in a lightly sprayed or oiled 13 × 9 inch glass baking dish; pour the glaze over it.

  4. Bake, uncovered, until the chicken is no longer pink in the center and lightly browned on top, about 1 hour.

  5. Spoon the juices over the chicken and serve on the rice
