Ingredients
- 2 celery stalks, minced
- 1/4 of a red onion, minced
- 2 small to medium carrots, minced
- 1 T olive oil
- 1 1/4 pounds ground beef, 85%
- 1 egg
- 1/2 cup breadcrumbs
- 2 T Parm cheese
- 2 heaping tablespoons tomato sauce
- Salt and pepper
Directions

In a skillet, cook celery, red onion and carrots in olive oil until soft. Let cool.

Combine vegetables with remaining ingredients and form into a loaf.

Bake at 350 for 50 minutes.
