Broccoli Cheese Soup

Ingredients

  • 5 cups water
  • 2 10 oz. packages frozen broccoli florets, thawed
  • 1 handful onion, chopped
  • 4 handfuls mushrooms, chopped
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 3 pieces chicken bouillon
  • 1/8 teaspoon nutmeg
  • 1 1/2 teaspoon salt
  • 3/4 teaspoon pepper
  • 1 cup whipping cream
  • 8 ounces shredded cheddar

Directions

  1. Bring 2 cups water to boil. Add broccoli, mushroom, and onion. Cover and boil 10 minutes. Set aside.

  2. Melt butter in a saucepan over low heat. Add flour and cook, stirring constantly until smooth and bubbly.

  3. Stir in 3 cups water and bring to boil — stirring constantly. Boil for 1 minute while stirring. Add broccoli mix, bouillon, salt, pepper, and nutmeg.

  4. Stir in cream.

  5. Stir in cheese until melted.
