Dutch Bosbessen Brood (Blueberry Bread)

Ingredients

  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 3 tablespoons grated orange rind
  • 3 tablespoons butter
  • 1 cup blueberries
  • 1/4 cup boiling water
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup orange juice (reserve 1 tbsp for glaze)
  • 1/2 cup powdered sugar

Directions

  1. Mix water and butter.

  2. Add orange juice and rind.

  3. Beat eggs in sugar.

  4. Add eggs to orange juice mixture.

  5. Add dry ingredients, then add blueberries.

  6. Bake at 350 for 1 hour.

  7. Make a glaze of 1/2 cup powdered sugar, 1 tbsp orange juice and 1 tbsp hot water.

  8. Drizzle over hot bread.
