Chicken Nacho Bake Made Over

Ingredients

  • 4 small boneless skinless chicken breast halves (1 lb.)
  • 1/2 c. salsa
  • 1/2 c. crushed baked tortilla chips
  • 1/2 c. 2% milk shredded sharp cheddar cheese
  • 2 slices bacon, chopped
  • 1 small onion, chopped
  • 2 c. grape tomatoes
  • 2 c. cooked long grain brown rice
  • 1/4 c. reduced fat or light sour cream

Directions

  1. Heat oven to 400

  2. Place chicken on foil covered baking sheet; top with salsa.

  3. Bake 20 minutes or until chicken is done, topping with crushed chips and cheese the last 5 minutes.

  4. Meanwhile, cook bacon in large skillet until crisp

  5. Remove bacon from skillet; drain on paper towels.

  6. Discard drippings from skillet.

  7. Add onions to skillet; cook and stir 5 minutes

  8. Stir in tomatoes; cook 4-5 minutes or until tomatoes begin to pop, stirring occasionally

  9. Add rice; cook until heated through, stirring occasionally

  10. Stir in bacon

  11. Top chicken with sour cream.

  12. Serve with rice mixture.
