Simple Southern-Style “Unfried” Chicken

Ingredients

  • 1 broiler-fryer chicken, cut up (3 1/4 lb.)
  • 1/2 c. light ranch dressing
  • 1 pkt. shake 'n bake extra crispy seasoned coating mix

Directions

  1. Remove skin from all chicken pieces except wings.

  2. Place chicken in large resealable plastic bag.

  3. Add dressing and seal bag; turn to evenly coat chicken with dressing.

  4. Refrigerate 30 minutes to marinate.

  5. Heat oven to 400

  6. Place coating mix in pie plate or shallow dish.

  7. Dip chicken in coating mix, turning to evenly coat both sides of each piece.

  8. Place in single layer on baking sheet.

  9. Sprinkle with any remaining coating mix. Discard bag and marinade

  10. Bake 40-45 minutes or until chicken is done
