Mandarin Salad

Ingredients

  • 1/2 c. sliced almonds
  • 3 T. sugar
  • 1/2 head iceberg lettuce
  • 1/2 head romaine lettuce
  • 1 c. chopped celery
  • 2 whole green onions, chopped
  • 1 11oz. can mandarin oranges, drained
  • DRESSING
  • 1/2 tsp salt
  • dash of pepper
  • 1/4 T chopped parsley
  • 2 T. sugar
  • 2 T. Vinegar
  • 1/4 c. vegetable oil

Directions

  1. In a small pan over medium heat, cook almonds and sugar, stirring constantly until almonds are coated and sugar is dissolved.

  2. WATCH CAREFULLY AS THEY WILL BURN EASILY

  3. Cool and store in air-tight container. (I use zip-lock bag.)

  4. Mix all dressing ingredients and chill

  5. Mix lettuces, celery and onions.

  6. Just before serving add almonds and oranges

  7. Toss with dressing
