Seven Minute Frosting

This is the 7-minute frosting that I use.
I have read other recipes for 7-minute type icings…they all call for using a double boiler…I haven’t used one and if you keep your heat low enough you shouldn’t need one. An old stand-by recipe from my days at Lone Star Gas Company home ec department in the 1970’s.

Ingredients

  • 2 egg whites
  • 3/4 cup sugar
  • 1/3 cup light corn syrup
  • 3 tablespoons water
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt

Directions

  1. Cook all ingredients EXCEPT vanilla over very low heat, beating constantly with rotary beater or mixer until frosting is fluffy and stands in peaks when beater is pulled out. (About 7 minutes.)

  2. Remove from heat.

  3. Fold in vanilla.

  4. Continue beating until thick enough to spread.

  5. Makes enough for top and sides of two 8 or 9 inch layers.
