Ingredients
- 1 T olive oil
- 1 Large onion, chopped
- 1 t chili powder
- 1 t cumin
- 1 clove garlic, minced
- 1/2 t oregano
- 1/4 t cayenne
- 6 c chicken broth
- 1 can rotel
- 1 can diced tomatoes
- 12 ounces chicken or turkey, either cooked or raw
- 1 c frozen corn
- 1 can black beans, rinsed and drained
Directions

Saute onions in olive oil until translucent. Add spices and garlic, stir 1 minute. Add stock and tomatoes. Simmer, add turkey…if raw, simmer until cooked through. Add corn. Serve with cheese and tortilla chips
