0 Point Italian Soup

Ingredients

  • All ingredients chopped
  • 2 c escarole,
  • 2 garlic cloves,
  • 2 c baby spinach
  • 2 small zucchini
  • 1 c onion
  • 1 red pepper
  • 1 fennel bulb
  • 6 cups vegetable broth
  • 28 oz can diced tomato
  • 1/4t red pepper flakes
  • 2 t thyme, fresh
  • 1 t oregano, fresh
  • 3/4 t salt
  • 1/4 t pepper
  • 1/4 c fresh basil
