Tomato-Basil Spaghettini

Ingredients

  • 16 oz. spahettini
  • Olive Oil
  • 4t garlic, crushed
  • 3/4 t salt and pepper
  • 1T sliced sun dried tomatoes
  • 1 med. tomato, diced
  • 1/2 cup chicken broth
  • 1/2 cup white wine
  • 2 sm. bunches basil, shredded
  • 4T butter
  • 2T parmesan
  • 2T pine nuts

Directions

  1. Cook spaghettini until partially done, drain and set aside.

  2. Saute garlic in oil, do not brown. Add s&p, tomatoes, diced tomato and saute. Add wine and broth, then pasta and basil.

  3. Cook until volume reduced by half…stir in butter, top with parmesan and pine nuts.
