Chocolate Chip Pumpkin Bread

Ingredients

  • 2 c sugar
  • 2 c canned pumpkin
  • 1/2 c canola oil
  • 1/2 c fat free vanilla pudding
  • 4 egg whites
  • 3 c flour
  • 2 t ground cinnamon
  • 1 1/4 t salt
  • 1 t baking soda
  • 1 c chocolate chips

Directions

  1. Preheat oven to 350 F

  2. Combine first 5 ingredients in a large bowl, stirring with a whisk. Mix dry ingredients. Add flour to pumpkin mixture, stirring until moist. Stir in chocolate chips.

  3. Bake into loaf pans or muffin tins
