Lemon Bread
(from mitchellboone’s recipe box)
1 – loaf pan, bake 60 mins
2 – 2lb loaves, bake 40 mins
4 – 1lb loaves, bake 30 mins
Prep time: 30 minutes
Cook time: 60 minutes
Ingredients
- 1/2 cup Shortening
- 1 cup Sugar
- 2 eggs
- 1 1/2 cup bread flour
- 1 1/2 t baking powder
- 1/4 t salt
- 1/2 cup milk
- Grated rind of 1 lemon
- 1/3 cup sugar
- 2 T squeezed lemon juice
Directions

Combine shortening and sugar, creaming until light and fluffy.

Add eggs, one at a time, beating after each addition.

Combine flour, Baking Powder and salt; add to creamed mixture alternately with milk, mixing after each addition.

Stir in lemon rind.

Pour batter into a well-greased 9×5×3 loafpan. Bake at 350 for 60 min.

Mix 1/3 cup sugar and 2 T lemon juice. Pour over loaf when you remove from oven.
