Lemon Bread

(from mitchellboone’s recipe box)

1 – loaf pan, bake 60 mins
2 – 2lb loaves, bake 40 mins
4 – 1lb loaves, bake 30 mins

Prep time: 30 minutes
Cook time: 60 minutes

Ingredients

  • 1/2 cup Shortening
  • 1 cup Sugar
  • 2 eggs
  • 1 1/2 cup bread flour
  • 1 1/2 t baking powder
  • 1/4 t salt
  • 1/2 cup milk
  • Grated rind of 1 lemon
  • 1/3 cup sugar
  • 2 T squeezed lemon juice

Directions

  1. Combine shortening and sugar, creaming until light and fluffy.

  2. Add eggs, one at a time, beating after each addition.

  3. Combine flour, Baking Powder and salt; add to creamed mixture alternately with milk, mixing after each addition.

  4. Stir in lemon rind.

  5. Pour batter into a well-greased 9×5×3 loafpan. Bake at 350 for 60 min.

  6. Mix 1/3 cup sugar and 2 T lemon juice. Pour over loaf when you remove from oven.
