German Dumplings

Prep time: 20 minutes
Cook time: 45 minutes
Serves 6 people

Ingredients

  • 1 1/2 cup of diced bacon (easier to dice if frozen)
  • 1 1/2 cup of lean summer sausage cut finely
  • 1 medium onion cut finely
  • 6 slices of sliced bread
  • 5 eggs
  • Milk
  • Salt
  • Quart of chicken broth

Directions

  1. Saute onion and bacon until tender

  2. Add bread dried and diced

  3. Mixed bacon, onion, meat and bread all together (do not drain fat from bacon)

  4. Put mixture in large bowl with 2 1/2 cups of flour

  5. Mix and coat well

  6. Add 5 beaten eggs and enough milk to make a stiff dough

  7. Add salt to taste

  8. Mold into snowball sized balls

  9. Drop into hot chicken broth

  10. Cook about 45 minutes

  11. Broth can be diluted with water

  12. Serve with sauerkraut
