Cornbread

Serves 12 people

Ingredients

  • 2 pouches cornbread mix (6.5 ounces each)
  • 16 ounces sour cream
  • 2 eggs
  • 2 ounce jar pimento, drained
  • 1 cup shredded cheddar cheese
  • 8 ounces kernel corn
  • 1/4 cup sliced green onions

Directions

  1. Stir cornbread mixes, sour cream and eggs in a large bowl until smooth.

  2. Add 1/2 cup cheese, corn, green onions and pimento.

  3. Stir until just combined.

  4. Pour into a greased 11 × 7 inch casserole dish.

  5. Bake for 35 minutes or until a toothpick inserted in the center comes out clean.

  6. Sprinkle with remaining 1/2 cup cheese before serving.
