Ingredients
- 2 pouches cornbread mix (6.5 ounces each)
- 16 ounces sour cream
- 2 eggs
- 2 ounce jar pimento, drained
- 1 cup shredded cheddar cheese
- 8 ounces kernel corn
- 1/4 cup sliced green onions
Directions

Stir cornbread mixes, sour cream and eggs in a large bowl until smooth.

Add 1/2 cup cheese, corn, green onions and pimento.

Stir until just combined.

Pour into a greased 11 × 7 inch casserole dish.

Bake for 35 minutes or until a toothpick inserted in the center comes out clean.

Sprinkle with remaining 1/2 cup cheese before serving.
