Jelly Roll

A tart jelly like plum preserves is the best!

Ingredients
- 1 cup sugar
- 3 eggs
- 5 tablespoons water
- 1 teaspoon vanilla
- 1 cup flour sifted
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 jar jelly
- powdered sugar
Directions

Line jelly roll pan with wax paper.

Beat eggs until thick at high speed for 5 minutes.

Gradually beat in sugar.

Add all at once and beat in the water and vanilla.

Sift flour, baking powder and salt together and add to batter, mixing at slow speed.

Beat until smooth and well blended on medium speed.

Bake at 375 degrees for 12-15 minutes.

Turn out, cool for 10 minutes. Remove wax paper.

Spread the jelly evenly and roll up.

TIP: I get a clean linen type dish towel, place it on the counter and sprinkle with powdered sugar. Then I turn out the cake onto this dish towel. After I spread the jelly onto the cake I then roll the jelly roll up, using the towel to help me pick up edges and form my roll…and the roll will have the powdered sugar all through it.

Sprinkle with additional powdered sugar if desired when serving.
