Christmas Rainbow Poke Cake

An old “jello” recipe.

Ingredients

  • 1 box white cake mix
  • 1 3 ounce package raspberry jello
  • 1 3 ounce package lime jello
  • 2 cups boiling water
  • 8 ounce container Cool Whip

Directions

  1. Prepare cake mix as directed on package.

  2. Pour batter into 2 round pans. Bake as directed; cool 10 minutes.

  3. Remove from pans; cool completely.

  4. Place cake layers, top sides up, back in the 2 clean pans; prick each layer with a utility fork at 1/2 inch intervals.

  5. Dissolve the raspberry jello in one cup boiling water. Dissolve the lime jello in one cup boiling water.

  6. Pour 1 cup of the raspberry flavor gelatin over 1 layer. Repeat with lime flavor gelatin.

  7. Refrigerate 3-4 hours.

  8. Dip 1 layer in pan into warm water for 10 seconds; invert on plate, gently shaking to loosen.

  9. Remove pan; spread layer with 1 cup of the whipped topping.

  10. Remove remaining layer from pan as above; invert on first layer.

  11. Remove pan; frost with remaining topping.

  12. Refrigerate; garnish with flattened gum drops, cut to resemble holly.
