Cake in a Coffee Mug
(from cokerlj’s recipe box)
This makes for a great gift. You can use any cake mix and instant pudding combo you can think of…chocolate cake/chocolate pudding; yellow cake/vanilla pudding; spice cake/vanilla pudding; lemon cake/lemon pudding; carrot cake/vanilla pudding, etc.
You could add powdered egg whites to the cake mix and adjust liquid to compensate as per directions on powdered whites.

Enjoy while warm.
-
You can just put chocolate chips on top of warm cake, let them melt and spread around.
-
You can also use Jiffy brand frosting mix and putting 1 tablespoon of the Jiffy frosting mix in a bag and then supplying instructions to add 1/2 teaspoon hot water to it.
-
You can also get a “mocha-chino” flavor by using instant coffee in the cake mix.
-
You can add 1/8 teaspoon cinnamon.
-
You can top with ice cream.

Possibilities are endless….
