Peppercorn-crusted Pork Loin

Ingredients

  • 1 (2 2/1-3 lb) boneless pork loin roast
  • 3 Tbsp dijon mustard
  • 1 Tbsp milk
  • 2 cups breadcrumbs
  • 2 Tbsp cracked black pepper
  • 1 tsp assorted crushed peppercorns
  • 1 tsp dried thyme
  • 1/4 tsp salt

Directions

  1. Trim fat from roast

  2. Combine mustard and milk, spread over roast.

  3. Combine breadcrumbs and next 4 ingredients, press breadcumbs mixture evenly over roast.

  4. Bake roast at 325 degrees for 2 hours or until meat thermometer measures 160 degrees F.
