Ingredients
- 1 (2 2/1-3 lb) boneless pork loin roast
- 3 Tbsp dijon mustard
- 1 Tbsp milk
- 2 cups breadcrumbs
- 2 Tbsp cracked black pepper
- 1 tsp assorted crushed peppercorns
- 1 tsp dried thyme
- 1/4 tsp salt

Trim fat from roast

Combine mustard and milk, spread over roast.

Combine breadcrumbs and next 4 ingredients, press breadcumbs mixture evenly over roast.

Bake roast at 325 degrees for 2 hours or until meat thermometer measures 160 degrees F.
