Ingredients
- 1 cup shortening
- 1 cup sugar
- 1 whole egg
- 2 eggs separated
- 1 cup bananas mashed
- 2 cups flour sifted
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup buttermilk
- 3/4 cup pecans chopped
- 1 teaspoon vanilla

- ICING:
- 1 3/4 cup sugar
- 3/4 cup water
- 1/8 teaspoon salt
- 3 egg whites
- 8 large marshmallows
- 2 teaspoons lemon juice
Directions

Cream shortening and sugar, add one whole egg and 2 yolks.

Beat well, add bananas, add sifted dry ingredients, alternately with buttermilk.

In a separate bowl, beat egg whites until stiff. Fold in egg whites.

Stir in nuts and vanilla.

Bake at 375 degrees for 1 hour 15 minutes.

ICING: Bring to boil first three ingredients. Beat egg whites until stiff. Add 3 tablespoons of hot syrup into egg whites and marshmallows. Boil syrup until it spins a thread 4 to 6 inches long. Pour over egg whites, beat until marshmallows dissolve and icing is fluffy.
