Hummingbird Cake

Ingredients

  • 3 cups flour
  • 1 teaspoon cinnamon
  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 cups mashed bananas
  • 1 cup chopped nuts
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla
  • 3 large eggs
  • 8 ounces crushed pineapple
  • 1 cup coconut
  • 1 tub vanilla frosting

Directions

  1. Preheat oven to 350 degrees.

  2. Butter two 9" round cake pans.

  3. Sift flour, baking soda, cinnamon, and salt together.

  4. In a second bowl beat oil, vanilla, and sugar together.

  5. Add eggs to wet mixture one at a time.

  6. Beat for 3 minutes.

  7. In a third bowl mix banana, pineapple, coconut, and nuts together.

  8. Add to egg mixture.

  9. Mix well.

  10. Now add wet mixture to dry mixture.

  11. Mix well.

  12. Pour batter into pans.

  13. Bake for 30 to 40 minutes.

  14. Allow cakes to cool competely.

  15. Stack and frost as desired.
