Ingredients
- 4 large portobello mushrooms
- 2 cloves of minced garlic
- 3 small tomatos
- 6 tablespoons of olive oil
- 8 ounces mozzarella
Directions

Cube tomatos and mozzarella.

De-stem portabello mushrooms.

Drizzle 3 tablespoons of olive oil over mushrooms.

Sprinkle with salt and pepper, to taste.

Grill mushrooms until tender; only a few minutes per side.

Whisk olive oil and garlic in bowl.

Add tomatos and cheese; gently toss.

Remove portabellos from grill.

Spoon tomatos / cheese mixture into mushroom caps.

Serve warm.
