Roasted Smashed Potatoes

Ingredients

  • 2 pounds small red potatoes
  • 1 teaspoon thyme
  • 6 tablespoons olive oil

Directions

  1. Adjust over racks to top and bottom positions in oven.

  2. Preheat to 500 degrees.

  3. Arrange potatoes on a baking sheet with sides.

  4. Pour 3/4 cup water into baking sheet.

  5. Tightly wrap the sheet with foil.

  6. Cook on bottom rack for 25 minutes, or until soft.

  7. Remove foil from baking sheet.

  8. Cool for 10 minutes.

  9. Drizzle 3 tablespoons of olive oil over potatoes.

  10. Roll potatoes around to make sure they are all coated well.

  11. Place a second baking sheet on top of the potatoes.

  12. Press down firmly.

  13. Sprinkle potatoes with thyme, salt, and pepper.

  14. Drizzle remaining olive oil on potatoes.

  15. Bake on top rake in oven for 15 minutes.

  16. Then move to bottom rack for another 20 minutes.
