Pineapple Cake

Ingredients

  • 2 eggs
  • 1 3/4 cup sugar
  • 1 3/4 cup flour sifted
  • 1 teaspoon baking soda
  • 1/2 cup butter flavor oil
  • 20 ounce can crushed pineapple including juice

  • ICING:
  • 3 ounce cream cheese
  • 1/2 pound box powdered sugar
  • 4 tablespoons margarine
  • 1 cup pecans chopped

Directions

  1. Sift sugar, baking soda, pour into bowl. Add slightly beaten eggs and butter oil. Add pineapple with juice.

  2. Blend until dry ingredients are incorporated and smooth.

  3. Grease 13×9×2 inch pan.

  4. Bake at 350 degrees for 30-40 minutes.

  5. ICING: Mix together, add pecans, ice cake while still warm.
