Three Bean Chili

Ingredients

  • 1 tsp olive oil
  • 2 cups chopped onion
  • 3 minced garlic cloves
  • 2 Tbsp Chili Powder
  • 1 1/2 Tbsp ground cumin
  • 1/2 tsp salt
  • 1 (32 oz) can crushed tomatoes
  • 2 (15 oz) cans black beans
  • 1 (16 oz) can kidney beans
  • 1 (15 oz) can pinto beans
  • 1 (15 oz) can beef or vegetable broth
  • 1/2 cup water
  • 1 chopped green pepper
  • 1 chopped red pepper
  • cayenne pepper or hot sauce to taste

Directions

  1. Heat oil in large pot, add onion and garlic and saute until tender.

  2. Stir in chili powder, cuin, and salt, saute for 1 minute.

  3. Add the remaining ingredients, bring to a boil, the cover and reduce heat, simmer for 30 minutes, stirring occasionally.

  4. Add cayenne pepper or hot sauce, if you like.
