Low-Fat Cereal Bars

Ingredients

  • 1 c rolled oats
  • 1 c Rice Krispies
  • 2/3 c chopped dried apricots
  • 3 T sunflower seeds
  • 1/4 c (toasted) coconut
  • 1/4 c brown sugar, packed
  • 2 T vegetable oil
  • 3 T honey
  • 2 T peanut butter
  • 1 T vanilla extract

Directions

  1. Preheat oven to 350, oil 8×8 pan

  2. Melt oil honey, and peanut butter in microwave just until easy to mix (20 s or so)

  3. Mix in vanilla

  4. Mix all ingredients together and press into oiled 8" pan.

  5. Bake at 350 for 20 minutes

  6. Cool and cut into bars.
