Sweet Potato Casserole

Ingredients

  • 2 40oz cans cut yams, drained
  • 1/2 cup margarine
  • 2 tsp. vanilla
  • 1 cup sugar
  • 1 cup chopped coconut
  • 2 eggs, well beaten
  • 1/2 cup margarine
  • 1/2 cup flour
  • 1 cup brown sugar
  • 1 cup chopped walnuts
  • marshmallows

Directions

  1. Preheat oven to 350 degrees

  2. Mix margarine, vanilla, sugar, chopped coconut and eggs well, pour over yams and put in baking dish

  3. Mix margarine, flour, brown sugar and chopped walnuts together and spread on top of yams

  4. Bake 35 minutes or until browning

  5. When almost done, put marshmallows on top and bake until they start to brown
