Ingredients

- 2 tablespoons olive oil
- 1 tablespoons balsamic vinegar
- 1 tablespoons fresh lime juice
- 2 tablespoons orange juice

- SALAD
- 2 pounds carrots, shredded
- 2 1/2 cups cilantro leaves, coursely chopped
- 1/4 cup sesame seeds, toasted
- 1/3 cup dried cranberries
- 1/2 teaspoon kosher salt
Directions

In food processor with course shredding disk attached, cut carrots into julienne strips.

In large salad bowl, whisk together olive oil, lime juice, vinegar, orange juice, and 1/4 teaspoon salt.

Add carrots, cilantro, cranberries, sesame seeds, and toss to combine.
