Ingredients
- 9 oz. Coconut milk
- 2/3 C. Water
- 5 oz. Chicken
- 5-6 Mushrooms
- 1 tsp. Cilantro
- 1 tsp. Green onion
- 4-5 pieces Lemon grass
- 4-5 pieces Galangal
- 4-5 Lime leaves
- 1/4 C. Lime Juice
- 1 Tbsp. to 1/4 C. Sugar (to taste)
- 1 tsp. Salt
Directions

Mix coconut milk and water in sauce pan. Bring temperature up to near boiling. Add lemon grass, galangal, lime leaf. Stir in and keep at temperature just below a boil. Cook for 5 minutes. Add chicken and let cook at just below boiling temperature until chicken is cooked. Stir in salt, sugar and lime juice. Add mushrooms, cilantro and green onions. Mix lightly. Ready to serve.
