Ingredients
- 1/3 cup unsalted butter
- 2/3 cup dark brown sugar
- 1/2 cup chunky peanut butter
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup unbleached all-purpose flour
- 2 cups granola cereal
- 1/2 cup dry-roasted salted peanuts, very coarsely crushed
- 1/2 cup raisins (add dried fruit only if there isn't any in the granola) or 1/2 cup dried cranberries (add dried fruit only if there isn't any in the granola) or 1/2 cup dried cherries (add dried fruit only if there isn't any in the granola)
Directions

Preheat oven to 350°; lightly grease (or line with parchment) two baking sheets.

In a big bowl, cream the butter, brown sugar, peanut butter, baking powder, cinnamon, ginger, and salt together.

Add the egg, beating the mixture until it is smooth and fluffy.

Stir in the flour, then the granola, nuts, and dried fruit.

Drop the dough by the tablespoonful onto the prepared baking sheets, then flatten slightly with your fingers.

Bake the cookies for 12 minutes, until they are lightly browned.

Remove them from the oven and transfer to a rack to cool.
