Peas & Ham With Creamy Orzo

Ingredients

  • 1 cup dry orzo pasta
  • 1/2 cup diced onion
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1/4 cup dry white wine
  • 1/2 cup heavy cream
  • 1/3 cup low sodium chicken broth
  • 1 cup fresh peas
  • 1 cup diced ham steak
  • 1 egg yolk
  • 1/4 cup grated parmesan cheese
  • salt
  • black pepper

Directions

  1. Cook orzo according to package directions; drain and set aside.

  2. Saute onion in oil in a saucepan over med-high heat until softened, about 5 minutes.

  3. Add garlic; cook 1 minute.

  4. Stir in wine, cream, broth, peas, and ham; simmer over med-low heat until peas are tender, 4-5 minutes.

  5. Stir in cooked orzo.

  6. Off heat, stir in egg yolk and Parmesan until thoroughly combined (yolk will cook from residual heat without the risk of curdling).

  7. Season with salt and pepper.

  8. Per cup: 416 calories, 24 g total fat (11 g sat), 3 g fiber, 30 g carb.
