Ingredients
- leg of lamb
- olive oil
- rosemary
- salt and fresh-ground pepper
- garlic, sliced
- Large brown paper bag
- 1 carrot
Directions
-
Get an early start.
-
Preheat oven to 175 degrees. Rub the lamb with olive oil, rosemary, salt and pepper.
-
Cut slits in the meat and insert garlic slivers (use LOTS of garlic).
-
Put the lamb in the paper bag, close the tightly, and place the carrot on top of the bag. (REALLY!)
-
Cook the lamb in a large open casserole, preferably cast iron, for 7 hours.
-
Let the lamb cool in the bag for 1/2 hour.
-
Pour the sauce from the bag over the lamb. The meat should gall away from the bone.
