Mediterranean Pasta Salad

Ingredients
- 3 cups artichoke hearts
- 3 cups red pepper, diced
- 3 cups red onion, diced
- 3 cups fresh baby spinach
- 3 cups cooked whole grain pasta spirals, chilled
- 1/4 cup feta cheese, crumbled
- 1 cup black olives
- 3 T olive oil
- 6 T red wine vinegar
- 3 t Italian herbs
Directions

Toss the pasta with the vinegar, olive oil, herbs, artichoke hearts, red pepper, red onion, olives and feta.

Refrigerate.

When ready to serve, toss with 1/2 cup spinach per serving.
