Mediterranean Pasta Salad

Serves 6 people

Ingredients

  • 3 cups artichoke hearts
  • 3 cups red pepper, diced
  • 3 cups red onion, diced
  • 3 cups fresh baby spinach
  • 3 cups cooked whole grain pasta spirals, chilled
  • 1/4 cup feta cheese, crumbled
  • 1 cup black olives
  • 3 T olive oil
  • 6 T red wine vinegar
  • 3 t Italian herbs

Directions

  1. Toss the pasta with the vinegar, olive oil, herbs, artichoke hearts, red pepper, red onion, olives and feta.

  2. Refrigerate.

  3. When ready to serve, toss with 1/2 cup spinach per serving.
