Herbed Walnut Artichoke Lettuce Wraps

Ingredients
- 5 large outer romaine leaves
- 1/2 cup artichoke hearts
- 1/4 cup onion, diced
- 1/4 cup red bell pepper, minced
- 1/2 cup cooked brown rice or wheatberries
- 1/2 cup cottage cheese
- 2 T walnuts, chopped
- Dash cracked black pepper,
- 1/2 t garlic, minced
- 1 t Italian herbs
Directions

Fold the artichoke hearts, onion, red pepper, brown rice, walnuts, pepper, garlic and herbs into the cottage cheese.

Fill the romaine leaves with the cottage cheese mixture.
