Chrissie’s Famous Carmel Corn

Ingredients

  • 3-4 Microwave popcorn bags OR 16 cups popped corn
  • 2 cups nuts (optional)
  • 1 1/4 cup sugar
  • 2/3 cup butter
  • 2/3 cup dark corn syrup
  • 1 tsp vanilla
  • 1/2 tsp baking soda

Directions

  1. Place popcorn and nuts in a large turkey roasting pan or 2 – 9×13 pans. Spray with cooking spray.

  2. In a 2 qt. pan, melt sugar, butter and corn syrup. Stir as it melts. When it comes to a rolling boil, do not stir any longer and let it boil for 5 mins.

  3. Remove from heat and stir in vanilla and baking soda. Stir well. It will foam up.

  4. Pour over popcorn and stir at the same time to coat all popcorn/nuts well. Bake for 1 hour in a 200 degree oven. Pull out and stir every 15 mins to keep it coated evenly.

  5. Spray cooking spray on the counter and turn the Carmel corn out on counter to cool.
