Ingredients

  • 2 (15 oz) cans black beans, drained and rinsed
  • 2 (15 oz) cans pinto beans, drained and rinsed
  • 2 (15 oz) cans white corn, drained and rinsed
  • 1 (4 oz) can chopped green chilies, undrained
  • 1 jalapeno chili pepper, seeded and finely chopped (optional)
  • 1 red bell pepper, seeded and chopped
  • 1 green bell pepper, seeded and chopped
  • 1 small red onion, chopped
  • 1 bunch fresh cilantro, chopped
  • 1/2 cup rice vinegar
  • 1/2 cup olive oil
  • 1/3 cup sugar
  • 1/2 tsp garlic powder

Directions

  1. Mix beans and chopped veggies in a bowl. To make dressing, stir rice vinegar, olive oil, sugar, and garlic powder together in a saucepan. Bring to a boil, then remove from heat and cool. Pour over bean/veggie mixture and toss to mix evenly. Serve with tortilla chips.
