Shelley’s Mom’s Salsa

Ingredients

  • 4 (28oz) cans of Hunts whole tomatoes
  • 3 Tbsp plus 1 tsp vinegar
  • 2 Tbsp plus 1 tsp salt
  • 5 Tbsp chopped jalapeno peppers
  • 1 small onion, chopped
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 medium clove garlic, crushed

Directions

  1. Puree tomatoes in blender one can at a time for only 3-4 seconds each. Do not puree any longer or salsa will be too runny.

  2. Pour into large pan. Add remaining ingredients and simmer on stove for 15-30 mins.

  3. Store in refrigerator for up to 10 days.
