Black Bean Everything

Ingredients
- 3 cans black beans, rinsed and drained
- 1 can white shoe peg corn, drained
- 2 can of ro-tel
- 1 bunch of green onions, chopped
- 3 red peppers, chopped
- 2 cups chopped tomatoes
- 1 cup cilantro, chopped
- 1/4 cup Red Wine vinegar
- Juice of one lemon
- cumin to taste
- 1 clove minced garlic
- chili powder and cayenne pepper to taste
- 1 chopped jalapeno
Directions

In large bowl, combine black beans, corn, Ro-tel, green onions, red peppers, tomatoes, and cilantro.

In small bowl, mix red wine vinegar, lemon juice, cumin, garlic, chili powder, cayenne powder and jalapeno (adjust spice to your taste!)

Add to remaining ingredients and chill in refrigerator. Make a large bowl.

Serve with corn chips or on top of chicken or fish.
